I have had ulcerative colitis since I was a child and have suffered a bad flare up for the past two years. This has led me to learning about gastrointestinal gut health, nutrition to optimize it, and how to overcome the struggle daily. Some day I would like to specialize in holistic nutrition and help others with gut health and gastrointestinal disease. I want people to feel good from the inside out and feel confident in the skin they are in! One of my favourite things is creating healthy recipes that taste good!
Here is a healthy Pho recipe!
I like to use stew meat but you can use chicken also
-stew meat or chicken whichever amount of meat you prefer
-One container of Campbells pho soup broth
-Green onion (lots, the white part and green part)
-A pack of tofu noodles
-Huge handful of bean sprouts
Option to add cup up bok choy (I do)
Cook the meat first and add salt, pepper, garlic and onion powder
Put altogether in a pot except the noodles and bean sprout and simmer for one hour (or more) then add the bean sprouts and noodles and simmer long enough to eat the sprouts and noodles and voila! Can also add a twist of lime or lime wedge (I do)!
